Ingredients
Prep
- 1 1/2 lb pork tenderloin
- 2 bell peppers
- 2 zucchini
- 2 T olive oil
- 2 T minced garlic
- 1 T balsamic vinegar
- 1 T lime juice
- 1 t dried rosemary
- 1 T dried parsley flakes
- salt and pepper to taste
On Cooking Day
- 2 bag frozen cauliflower rice
Instructions
To Assemble
- Cut pork, bell peppers and zucchini into bite size pieces and add to large zipper bag.
- Add next 7 ingredients to a small bowl and mix well. Pour most of this sauce over pork mixture and reserve a small amount to season cauliflower rice on cooking day.
To Cook
- Pour pork mixture onto large baking sheet sprayed with non stick spray.
- Broil for 5-7 minutes or until pork is cooked through.
- Mix cauliflower rice with remaining sauce mix and cook until tender.
