Sheet Pan Pork Bites – CE
peppers, zucchini and cauliflower rice

Ingredients

Prep
  • 1 1/2 lb pork tenderloin
  • 2 bell peppers
  • 2 zucchini
  • 2 T olive oil
  • 2 T minced garlic
  • 1 T balsamic vinegar
  • 1 T lime juice
  • 1 t dried rosemary
  • 1 T dried parsley flakes
  • salt and pepper to taste
On Cooking Day
  • 2 bag frozen cauliflower rice

Instructions

To Assemble
  1. Cut pork, bell peppers and zucchini into bite size pieces and add to large zipper bag.
  2. Add next 7 ingredients to a small bowl and mix well. Pour most of this sauce over pork mixture and reserve a small amount to season cauliflower rice on cooking day.
To Cook
  1. Pour pork mixture onto large baking sheet sprayed with non stick spray.
  2. Broil for 5-7 minutes or until pork is cooked through.
  3. Mix cauliflower rice with remaining sauce mix and cook until tender.
