Ingredients
Prep
- 5 boneless chicken breasts medium size
- 20 oz broccoli florets
- 2 t ground ginger
- 1/2 C orange marmalade
- 3 T soy sauce or liquid aminos
- 2 T Dijon mustard
- 1 t crushed red pepper flakes optional
- 3 T sesame oil
- 2 green onions
- 1 T olive oil
On Cooking Day
- 2 bags frozen rice steamers
- 6 fortune cookies
Instructions
To Assemble
- Chop chicken into 1 1/2 inch pieces and add to large zipper bag.
- Add broccoli to another large zipper bag.
- Mix next 6 ingredients in a small bowl. Mix well and pour 1/2 over chicken and 1/4 over over broccoli [reserving 1/4 for rice on cook day] along with olive oil. Zip bags and shake to mix.
- Slice green onions and store in small bowl with lid.
To Cook
- Pour chicken and broccoli onto a sheet pan sprayed with non stick spray.
- Cook in a 400 degree oven for 13-18 minutes or until chicken is cooked through.
- Cook rice according to package directions and toss with remaining sauce and green onions. Serve with fortune cookies.
