Sheet Pan Orange Chicken Stir Fry – OP1
rice and fortune cookies

Ingredients

Prep
  • 5 boneless chicken breasts medium size
  • 20 oz broccoli florets
  • 2 t ground ginger
  • 1/2 C orange marmalade
  • 3 T soy sauce or liquid aminos
  • 2 T Dijon mustard
  • 1 t crushed red pepper flakes optional
  • 3 T sesame oil
  • 2 green onions
  • 1 T olive oil
On Cooking Day
  • 2 bags frozen rice steamers
  • 6 fortune cookies

Instructions

To Assemble
  1. Chop chicken into 1 1/2 inch pieces and add to large zipper bag.
  2. Add broccoli to another large zipper bag.
  3. Mix next 6 ingredients in a small bowl. Mix well and pour 1/2 over chicken and 1/4 over over broccoli [reserving 1/4 for rice on cook day] along with olive oil. Zip bags and shake to mix.
  4. Slice green onions and store in small bowl with lid.
To Cook
  1. Pour chicken and broccoli onto a sheet pan sprayed with non stick spray.
  2. Cook in a 400 degree oven for 13-18 minutes or until chicken is cooked through.
  3. Cook rice according to package directions and toss with remaining sauce and green onions. Serve with fortune cookies.
