Ingredients
Prep
- 6 tilapia filets single serving size
- 1/3 C lime juice
- 1/4 C fresh chopped cilantro
- 4 T olive oil
- 2 T water
- 1 T honey
- 1 T minced garlic
- 1 t dried red chili flakes
- 1 large sweet potato
- 1 head broccoli
- salt and pepper to taste
On Cooking Day
- 1 pkg cauliflower rice
Instructions
To Assemble
- Place fish in a large zipper bag. Zip to seal. Mix next 7 ingredients (half of the olive oil) in a small bowl with lid.
- Cut sweet potato in fry like strips and cut broccoli into florets. Place both in a large zipper bag with remaining olive oil and salt and pepper. Zip to seal and squish to mix.
To Cook
- Spray a baking sheet with non stick spray. Bake at 425°F. Place veggies and fish in a single layer on baking sheet. Stir marinade and pour over the fish.
- Bake until fish flakes easily with a fork and the broccoli begin to crisp up on the edges and have softened, about 25 – 30 minutes.
- Cook cauliflower rice according to package directions.
