Sheet Pan Chili Lime Fish and Veggies – CE

Ingredients

Prep
  • 6 tilapia filets single serving size
  • 1/3 C lime juice
  • 1/4 C fresh chopped cilantro
  • 4 T olive oil
  • 2 T water
  • 1 T honey
  • 1 T minced garlic
  • 1 t dried red chili flakes
  • 1 large sweet potato
  • 1 head broccoli
  • salt and pepper to taste
On Cooking Day
  • 1 pkg cauliflower rice

Instructions

To Assemble
  1. Place fish in a large zipper bag. Zip to seal. Mix next 7 ingredients (half of the olive oil) in a small bowl with lid.
  2. Cut sweet potato in fry like strips and cut broccoli into florets. Place both in a large zipper bag with remaining olive oil and salt and pepper. Zip to seal and squish to mix.
To Cook
  1. Spray a baking sheet with non stick spray. Bake at 425°F. Place veggies and fish in a single layer on baking sheet. Stir marinade and pour over the fish.
  2. Bake until fish flakes easily with a fork and the broccoli begin to crisp up on the edges and have softened, about 25 – 30 minutes.
  3. Cook cauliflower rice according to package directions.
