Ingredients
Prep
- 1/4 C fresh cilantro
- 1 C green salsa mild
- 1 T olive oil
- 2 T lime juice
- 1/2 t salt
- 6 pork chops
- 1 can black beans
- 1 1/2 C frozen corn
On Cooking Day
- 2 bag steamers brown rice
- 1/2 C sour cream optional
Instructions
To Assemble
- Chop cilantro and add to small bowl along with next 4 ingredients.
- Place pork chops in a large zipper bag and pour half salsa mixture into bag. Zip and shake to mix.
- Rinse and drain black beans and add to another large zipper bag along with corn. Pour remaining salsa mixture into bag. Zip and shake to mix.
To Cook
- Grill pork chops on indoor or outdoor grill.
- Cook rice according to package directions and mix (if desired) with black bean/corn mixture. Warm in microwave if needed.
- Serve with sour cream if desired.
