Salsa Verde Pork Chops – CE

Ingredients

Prep
  • 1/4 C fresh cilantro
  • 1 C green salsa mild
  • 1 T olive oil
  • 2 T lime juice
  • 1/2 t salt
  • 6 pork chops
  • 1 can black beans
  • 1 1/2 C frozen corn
On Cooking Day
  • 2 bag steamers brown rice
  • 1/2 C sour cream optional

Instructions

To Assemble
  1. Chop cilantro and add to small bowl along with next 4 ingredients.
  2. Place pork chops in a large zipper bag and pour half salsa mixture into bag. Zip and shake to mix.
  3. Rinse and drain black beans and add to another large zipper bag along with corn. Pour remaining salsa mixture into bag. Zip and shake to mix.
To Cook
  1. Grill pork chops on indoor or outdoor grill.
  2. Cook rice according to package directions and mix (if desired) with black bean/corn mixture. Warm in microwave if needed.
  3. Serve with sour cream if desired.
