Ingredients
Prep
- 1 lb smoked sausage
- 1 C frozen chopped onions
- 5 baking potatoes
- 2 T olive oil
- salt and pepper to taste
- 2 t paprika
On Cooking Day
- 1/2 C sharp cheddar cheese
- 6 C salad greens
Instructions
To Assemble
- Slice sausage into one inch rounds and chop potatoes into bite size pieces. Add all ingredients to a zip lock bag and shake to mix.
To Cook
- Roast in oven 30-40 minutes at 400, stirring every 15 minutes or so, until the potatoes are golden brown and tender.
- Turn off the oven. Scatter the cheese over top of the cooked meat and potatoes, Pop back into the oven a few minutes to melt the cheese.
- Serve with salad.
