Ingredients
Prep
- 4 tomato
- 2 medium zucchini
- 12 chicken tenders
- 6 slices prosciutto
- 3 T olive oil
- 1 t dried Italian seasoning
- 2 T minced garlic
- salt and pepper to taste
On Cooking Day
- 10 C salad greens
- 2 bag frozen brown rice steamers
Instructions
To Assemble
- Thick slice tomatoes and zucchini and place in baking dish (you may need a second dish) sprayed with non stick spray.
- Slice prosciutto slices into 2 long strips and wrap one around each chicken tender. Lay on top of tomatoes, and zucchini.
- Mix last 4 ingredients and spread over chicken tenders. Cover with foil.
To Cook
- Uncover and bake in a 375 degree oven for 35-45 minutes or until chicken is cooked through.
- Cook rice according to package directions. Serve with salad.
