Prosciutto Tomato Baked Chicken – CE

Ingredients

Prep
  • 4 tomato
  • 2 medium zucchini
  • 12 chicken tenders
  • 6 slices prosciutto
  • 3 T olive oil
  • 1 t dried Italian seasoning
  • 2 T minced garlic
  • salt and pepper to taste
On Cooking Day
  • 10 C salad greens
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Thick slice tomatoes and zucchini and place in baking dish (you may need a second dish) sprayed with non stick spray.
  2. Slice prosciutto slices into 2 long strips and wrap one around each chicken tender. Lay on top of tomatoes, and zucchini.
  3. Mix last 4 ingredients and spread over chicken tenders. Cover with foil.
To Cook
  1. Uncover and bake in a 375 degree oven for 35-45 minutes or until chicken is cooked through.
  2. Cook rice according to package directions. Serve with salad.
