Ingredients
Prep
- 2 lbs pork tenderloin
- 7 oz coconut milk
- 1 T fish sauce
- 1 T soy sauce
- 1 T sugar
- 1 t curry powder
- 16 oz broccoli florets
- 2 T olive oil
- salt and pepper to taste
- 1/2 C creamy peanut butter
- 2 T soy sauce
- 1 T maple syrup
- 2 T lime juice
- 1/4 t red pepper flakes
On Cooking Day
- 2 bag frozen rice steamers
- 1/4 C water
Instructions
To Assemble
- Cut pork into bite size pieces and place in a large zipper bag. Add next 5 ingredients to bag.
- Add the next 3 ingredients to another large zipper bag. Zip both bags to seal and squish around to mix.
- Mix last 5 ingredients in a bowl with lid.
To Cook
- Place pork and broccoli on large baking sheet.
- Bake 400 degree oven for around 20 minutes or until pork is cooked through.
- Cook rice according to package directions.
- Add water to peanut sauce until desired consistency. Warm in microwave until just room temperature. Serve as a dipping sauce.
