Pork Satay and Broccoli Unkabobs- C
rice and peanut dipping sauce

Ingredients

Prep
  • 2 lbs pork tenderloin
  • 7 oz coconut milk
  • 1 T fish sauce
  • 1 T soy sauce
  • 1 T sugar
  • 1 t curry powder
  • 16 oz broccoli florets
  • 2 T olive oil
  • salt and pepper to taste
  • 1/2 C creamy peanut butter
  • 2 T soy sauce
  • 1 T maple syrup
  • 2 T lime juice
  • 1/4 t red pepper flakes
On Cooking Day
  • 2 bag frozen rice steamers
  • 1/4 C water

Instructions

To Assemble
  1. Cut pork into bite size pieces and place in a large zipper bag. Add next 5 ingredients to bag.
  2. Add the next 3 ingredients to another large zipper bag. Zip both bags to seal and squish around to mix.
  3. Mix last 5 ingredients in a bowl with lid.
To Cook
  1. Place pork and broccoli on large baking sheet.
  2. Bake 400 degree oven for around 20 minutes or until pork is cooked through.
  3. Cook rice according to package directions.
  4. Add water to peanut sauce until desired consistency. Warm in microwave until just room temperature. Serve as a dipping sauce.
