Ingredients
Prep
- 2 T mayonnaise
- 2 T lemon juice
- 1 t minced garlic
- 1/4 C Parmesan cheese
- 1/4 C bread crumbs or almond meal for keto
- 1 T fresh parsley chopped
- 1/4 t dried thyme
- 2 T olive oil
- 4 salmon filets
- 16 ounces broccoli florets
- 2 T olive oil
- salt and pepper to taste
On Cooking Day
- 2 bags frozen rice steamer
Instructions
To Assemble
- Mix first 8 ingredients in a small bowl
- Place salmon filets in a storage container.
- Spoon and spread cheese mixture evenly over each filet and cover with lid.
- Add broccoli florets, olive oil, salt & pepper to a large zipper bag. Zip and shake to mix well.
To Cook
- Spray large baking sheet with non stick spray and place salmon filets along center of pan about an inch apart.
- Pour broccoli around salmon pieces.
- Bake 400 degree oven for 12-18 minutes or until desired doneness.
