Ingredients
Prep
- 1 lb baby gold potatoes
- 1 lb brussel sprouts
- 4 T olive oil
- 6 cod filets
- 2 T whole grain mustard
- salt and pepper to taste
On Cooking Day
- 1 pkg dinner rolls
Instructions
To Assemble
- Cut potatoes into small bite size pieces. Slice brussel sprouts in half. Place both veggies in a large zipper bag with 2 T of olive oil and salt and pepper. Zip to seal and squish to mix.
- Place fish in another large zipper bag with mustard and remaining oil. Gently toss to coat.
To Cook
- Place veggies on a sheet pan and cook at 425 for 10 minutes. Remove, add fish to pan and roast another 10-15 minutes until fish is cooked through and flakey.
- Serve with dinner rolls if desired.
