One Pan Mustard Seed Fish – CE
potatoes, Brussel sprouts, and dinner rolls

Prep
  • 1 lb baby gold potatoes
  • 1 lb brussel sprouts
  • 4 T olive oil
  • 6 cod filets
  • 2 T whole grain mustard
  • salt and pepper to taste
On Cooking Day
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Cut potatoes into small bite size pieces. Slice brussel sprouts in half. Place both veggies in a large zipper bag with 2 T of olive oil and salt and pepper. Zip to seal and squish to mix.
  2. Place fish in another large zipper bag with mustard and remaining oil. Gently toss to coat.
To Cook
  1. Place veggies on a sheet pan and cook at 425 for 10 minutes. Remove, add fish to pan and roast another 10-15 minutes until fish is cooked through and flakey.
  2. Serve with dinner rolls if desired.
