Ingredients
Prep
- 6 boneless chicken breasts thin cut
- 3 yellow onion
- 2 C sliced mushrooms
- 3 yellow squash
- 3 T olive oil
- 2 T dry onion soup mix
- salt and pepper to taste
On Cooking Day
- 10 C salad greens
- 2 pkg frozen rice steamer
Instructions
To Assemble
- Place chicken in large zipper bag and set aside.
- Chop onions and squash into 1 inch pieces and add to bag with chicken. Add remaining ingredients. Zip to seal and squish to mix.
To Cook
- Pour vegetables and chicken onto large baking sheet sprayed with non stick spray. Bake in a 400 degree oven for 25-30 minutes or until chicken is cooked through and veggies are tender.
- Cook rice according to package directions. Serve with salad.
