One Dish Chicken and Veggies – CE
rice and salad

Ingredients

Prep
  • 6 boneless chicken breasts thin cut
  • 3 yellow onion
  • 2 C sliced mushrooms
  • 3 yellow squash
  • 3 T olive oil
  • 2 T dry onion soup mix
  • salt and pepper to taste
On Cooking Day
  • 10 C salad greens
  • 2 pkg frozen rice steamer

Instructions

To Assemble
  1. Place chicken in large zipper bag and set aside.
  2. Chop onions and squash into 1 inch pieces and add to bag with chicken. Add remaining ingredients. Zip to seal and squish to mix.
To Cook
  1. Pour vegetables and chicken onto large baking sheet sprayed with non stick spray. Bake in a 400 degree oven for 25-30 minutes or until chicken is cooked through and veggies are tender.
  2. Cook rice according to package directions. Serve with salad.
