Ingredients
Prep
- 1 small yellow onion
- 15 oz can black beans
- 2 t minced garlic
- 16 oz baby bella mushrooms sliced
- 1 t chili powder
- 1/2 t cumin
- salt and pepper to taste
On Cooking Day
- 4 oz spinach
- 1 C shredded Mexican cheese
- 1/2 C salsa
- 12 whole wheat tortillas
- 2 pkg frozen rice steamers
Instructions
To Assemble
- Drain and rinse black beans and chop onion.
- Add all ingredients to large zipper bag. Zip to seal and squish to mix.
To Cook
- Heat oil in skillet. Add prepped ingredients. Cook at medium heat for 10 minutes or until mushrooms have softened and started to brown. Add spinach and cook until wilted (around 2 minutes). Then stir in cheese and salsa.
- Warm tortillas in microwave and fill each with mixture and roll up. Cook rice according to package directions.
