Mushroom, Black Bean, and Spinach Burritos – CE

Ingredients

Prep
  • 1 small yellow onion
  • 15 oz can black beans
  • 2 t minced garlic
  • 16 oz baby bella mushrooms sliced
  • 1 t chili powder
  • 1/2 t cumin
  • salt and pepper to taste
On Cooking Day
  • 4 oz spinach
  • 1 C shredded Mexican cheese
  • 1/2 C salsa
  • 12 whole wheat tortillas
  • 2 pkg frozen rice steamers

Instructions

To Assemble
  1. Drain and rinse black beans and chop onion.
  2. Add all ingredients to large zipper bag. Zip to seal and squish to mix.
To Cook
  1. Heat oil in skillet. Add prepped ingredients. Cook at medium heat for 10 minutes or until mushrooms have softened and started to brown. Add spinach and cook until wilted (around 2 minutes). Then stir in cheese and salsa.
  2. Warm tortillas in microwave and fill each with mixture and roll up. Cook rice according to package directions.
