Ingredients
Prep
- 2 lb boneless chicken breasts
- 1 bell peppers any color
- 1 zucchini
- 8 oz pineapple chunks
- 1/4 C coconut milk
- 2 T tamari soy sauce or liquid aminos
- 2 T minced garlic
- 1 t black pepper
- 1 t sea salt
- 6 sweet potatoes small
On Cooking Day
- 6 C salad greens
Instructions
To Assemble
- Chop chicken, bell pepper and zucchini into bite-sized chunks and add to large zipper bag.
- Drain pineapple and add with remaining ingredients to same bag. Zip to seal and squish around to coat.
- Wrap sweet potatoes individually in foil.
To Cook
- Place sweet potatoes in slow cooker in the morning and cook on low 6 hours.
- Pour contents of bag onto a baking sheet and broil for 5 minutes or until chicken is cooked through. May also be grilled in a grill basket on outdoor grill.
- Serve with green salad.
