Maui Chicken Un-Kabobs – CE

Ingredients

Prep
  • 2 lb boneless chicken breasts
  • 1 bell peppers any color
  • 1 zucchini
  • 8 oz pineapple chunks
  • 1/4 C coconut milk
  • 2 T tamari soy sauce or liquid aminos
  • 2 T minced garlic
  • 1 t black pepper
  • 1 t sea salt
  • 6 sweet potatoes small
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Chop chicken, bell pepper and zucchini into bite-sized chunks and add to large zipper bag.
  2. Drain pineapple and add with remaining ingredients to same bag. Zip to seal and squish around to coat.
  3. Wrap sweet potatoes individually in foil.
To Cook
  1. Place sweet potatoes in slow cooker in the morning and cook on low 6 hours.
  2. Pour contents of bag onto a baking sheet and broil for 5 minutes or until chicken is cooked through. May also be grilled in a grill basket on outdoor grill.
  3. Serve with green salad.
