Ingredients
Prep
- 1 1/2 lb asparagus
- 4 T olive oil
- 1 T lemon juice
- 4 T minced garlic
- 1/2 C shredded Parmesan cheese
- 1 T dried parsley flakes
- salt and pepper to taste
- 6 salmon fillets
On Cooking Day
- 2 bag cauliflower rice
- 10 C salad greens
Instructions
To Assemble
- Trim woody ends from asparagus and add to baking dish sprayed with non stick spray.
- Mix next 6 ingredients in a small bowl and brush/pour 1/4 of the cheese mixture over top.
- Place salmon on top of asparagus and pour/brush remaining cheese mixture over each salmon filet. Cover with plastic wrap.
To Cook
- Uncover and bake in a 400 degree oven for 15-20 minutes or until salmon is cooked through.
- Cook cauliflower rice according to package directions.
