Lemon Parmesan Salmon and Asparagus – CE

Ingredients

Prep
  • 1 1/2 lb asparagus
  • 4 T olive oil
  • 1 T lemon juice
  • 4 T minced garlic
  • 1/2 C shredded Parmesan cheese
  • 1 T dried parsley flakes
  • salt and pepper to taste
  • 6 salmon fillets
On Cooking Day
  • 2 bag cauliflower rice
  • 10 C salad greens

Instructions

To Assemble
  1. Trim woody ends from asparagus and add to baking dish sprayed with non stick spray.
  2. Mix next 6 ingredients in a small bowl and brush/pour 1/4 of the cheese mixture over top.
  3. Place salmon on top of asparagus and pour/brush remaining cheese mixture over each salmon filet. Cover with plastic wrap.
To Cook
  1. Uncover and bake in a 400 degree oven for 15-20 minutes or until salmon is cooked through.
  2. Cook cauliflower rice according to package directions.
