Ingredients
Prep
- 31 oz canned chickpeas
- 2 T frozen chopped onions
- 2 T lemon juice
- 1 T olive oil
- 1 t minced garlic
- 1/2 t oregano
- salt and pepper to taste
- 1/2 pint cherry tomatoes
On Cooking Day
- 1 avocado
- 6 flour tortillas
- 8 oz salad greens
- 1 bunch grapes
Instructions
To Assemble
- Rinse and drain chickpeas, then place them in a large bowl. Mash the chickpeas slightly with a large wooden spoon, leaving them fairly chunky for texture.
- Add next 6 ingredients and mix well. Cover.
- Slice tomatoes in half and place in separate small bowl with lid.
To Cook
- Dice avocado and mix in to chickpeas. Make wraps by placing greens, chickpea mixture, and tomatoes in tortilla.
- Serve with grapes.
