Lemon Chickpea Wraps – CE

Ingredients

Prep
  • 31 oz canned chickpeas
  • 2 T frozen chopped onions
  • 2 T lemon juice
  • 1 T olive oil
  • 1 t minced garlic
  • 1/2 t oregano
  • salt and pepper to taste
  • 1/2 pint cherry tomatoes
On Cooking Day
  • 1 avocado
  • 6 flour tortillas
  • 8 oz salad greens
  • 1 bunch grapes

Instructions

To Assemble
  1. Rinse and drain chickpeas, then place them in a large bowl. Mash the chickpeas slightly with a large wooden spoon, leaving them fairly chunky for texture.
  2. Add next 6 ingredients and mix well. Cover.
  3. Slice tomatoes in half and place in separate small bowl with lid.
To Cook
  1. Dice avocado and mix in to chickpeas. Make wraps by placing greens, chickpea mixture, and tomatoes in tortilla.
  2. Serve with grapes.
