Ingredients
Prep
- 6 salmon fillets
- 1/4 C balsamic vinegar
- 1/4 C honey
- 1 T minced garlic
- salt and pepper to taste
- 16 oz butternut squash
- 1 T olive oil
On Cooking Day
- 6 C salad greens
Instructions
To Assemble
- Combine first 5 ingredients in a large zipper bag. Zip to seal and squish around to coat.
- Place butternut squash and olive oil on a large sheet of foil. Fold foil around to make a tent.
To Cook
- Grill salmon and butternut squash packet until fish flakes easily with a fork.
- Serve with green salad.
