Grilled Honey Balsamic Glazed Salmon – C

Ingredients

Prep
  • 6 salmon fillets
  • 1/4 C balsamic vinegar
  • 1/4 C honey
  • 1 T minced garlic
  • salt and pepper to taste
  • 16 oz butternut squash
  • 1 T olive oil
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Combine first 5 ingredients in a large zipper bag. Zip to seal and squish around to coat.
  2. Place butternut squash and olive oil on a large sheet of foil. Fold foil around to make a tent.
To Cook
  1. Grill salmon and butternut squash packet until fish flakes easily with a fork.
  2. Serve with green salad.

Recipe alternative: use chicken breasts or sirloin steak and grill until cooked through.
