Ingredients
Prep
- 1 C seasoned stuffing cubes like Stove Top
- 1-1/2 lb ground turkey
- 1/2 C milk
- 1 egg
- 1 C frozen chopped celery, onion, pepper blend
- salt and pepper to taste
- 1 t dried sage
- 1 t dried rosemary
- 1/2 C whole-berry cranberry sauce
- 1/2 C ketchup
- 1/2 t hot sauce
On Cooking Day
- 1 bag steamers mashed potatoes
- 16 oz frozen peas
- 1 pkg dinner rolls
Instructions
To Assemble
- Pulse stuffing cubes in a food processor into smaller chunks or put in baggie and smash with a rolling pin.
- Add stuffing crumbs and next 7 ingredients to a large bowl and mix well. Use gloves for easy clean up.
- Use an ice cream scoop to scoop equal portions into muffin tin sprayed with non stick spray.
- Mix last 3 ingredients in a small bowl. Spread equally over each meatloaf. Cover with plastic wrap.
To Cook
- Bake uncovered in a 450 degree oven for 18-25 minutes or until meat is cooked through.
- Cook peas and mashed potatoes according to package directions. Serve with dinner rolls.
