Holiday Mini Meatloaves – C
dinner rolls, peas and mashed potatoes

Ingredients

Prep
  • 1 C seasoned stuffing cubes like Stove Top
  • 1-1/2 lb ground turkey
  • 1/2 C milk
  • 1 egg
  • 1 C frozen chopped celery, onion, pepper blend
  • salt and pepper to taste
  • 1 t dried sage
  • 1 t dried rosemary
  • 1/2 C whole-berry cranberry sauce
  • 1/2 C ketchup
  • 1/2 t hot sauce
On Cooking Day
  • 1 bag steamers mashed potatoes
  • 16 oz frozen peas
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Pulse stuffing cubes in a food processor into smaller chunks or put in baggie and smash with a rolling pin.
  2. Add stuffing crumbs and next 7 ingredients to a large bowl and mix well. Use gloves for easy clean up.
  3. Use an ice cream scoop to scoop equal portions into muffin tin sprayed with non stick spray.
  4. Mix last 3 ingredients in a small bowl. Spread equally over each meatloaf. Cover with plastic wrap.
To Cook
  1. Bake uncovered in a 450 degree oven for 18-25 minutes or until meat is cooked through.
  2. Cook peas and mashed potatoes according to package directions. Serve with dinner rolls.
