Ingredients
Prep
- 2 lb ground turkey
- 1 C frozen chopped onions
- salt and pepper to taste
- 3 zucchini
- 1 pint cherry tomatoes
- 3/4 C pesto
On Cooking Day
- 3 T grated Parmesan
- 2 T olive oil
- 2 pkg frozen rice steamers
Instructions
To Assemble
- Add first 3 ingredients to a large zipper bag, zip to seal and squish to mix.
- Dice zucchini and cut tomatoes in half. Place both in large zipper bag with pesto.
To Cook
- Heat oil in a skillet. Add turkey mixture and cook until cooked through (about 5-7 minutes). Add zucchini mixture and cook an additional 4-5 minutes. Sprinkle with cheese just prior to serving.
- Cook rice according to package directions.
