Ingredients
Prep
- 1/4 C red wine vinegar
- 1/4 C olive oil
- 3 T lemon juice
- 1 T minced garlic
- 1 T dried parsley or fresh chopped
- 1 t dried oregano
- 1 t dried dill
- salt and pepper to taste
- 30 oz canned chickpeas
- 1 bell pepper any color
- 1 cucumber
- 1 pint cherry tomatoes
- 6 boneless chicken breasts
To Cook
- 1 pkg dinner rolls
Instructions
To Assemble
- Mix first 8 ingredients in a small bowl. This will be your dressing and marinade.
- Rinse and drain chickpeas and add to large zipper bag.
- Chop bell pepper, cucumber and tomatoes and add to chickpeas in bag. Pour 1/2 dressing into bag. Zip and shake to mix.
- Add chicken breasts to another large zipper bag and pour in remaining dressing. Zip and shake to mix.
To Cook
- Grill chicken on indoor or outdoor grill or brown in skillet on stovetop.
- Serve with chickpea salad and dinner rolls.
