Ingredients
- 1/4 C olive oil
- 2 T lime juice
- 2 T minced garlic
- 1 t cumin
- salt and pepper to taste
- 6 boneless chicken breasts
- 2 sweet potatoes
- 1 can black beans
- 1/2 C fresh cilantro chopped
- 16 oz frozen corn
- 8 oz sour cream
- 1 T lime juice
- 1 t minced garlic
- 1/4 t salt
Instructions
To Assemble
- Mix first 5 ingredients in a small bowl and set aside. (this is the marinade)
- Add chicken to a large zipper bag and pour half lime marinade into bag. Zip and shake to mix.
- Chop sweet potato into very small (1/4-1/2 inch) pieces and add to another large zipper bag with 1 T marinade. Zip and shake to mix.
- Rinse and drain black beans and add to medium bowl with lid along with next 2 ingredients and remaining marinade and mix well.
- Mix last 4 ingredients in a small bowl with lid. This will be the cream sauce.
To Cook
- Grill chicken on indoor or outdoor grill and bake sweet potatoes in grill pan along with chicken (on grill) or bake in 400 degree oven for 20 minutes.
- Serve with black bean and corn salad and lime cream sauce. Black bean and corn salad may also be tossed with cooked sweet potatoes before serving.
