Grilled Chicken with Lime Cream Sauce – CE
roasted sweet potatoes & black bean/corn salad

Ingredients

  • 1/4 C olive oil
  • 2 T lime juice
  • 2 T minced garlic
  • 1 t cumin
  • salt and pepper to taste
  • 6 boneless chicken breasts
  • 2 sweet potatoes
  • 1 can black beans
  • 1/2 C fresh cilantro chopped
  • 16 oz frozen corn
  • 8 oz sour cream
  • 1 T lime juice
  • 1 t minced garlic
  • 1/4 t salt

Instructions

To Assemble
  1. Mix first 5 ingredients in a small bowl and set aside. (this is the marinade)
  2. Add chicken to a large zipper bag and pour half lime marinade into bag. Zip and shake to mix.
  3. Chop sweet potato into very small (1/4-1/2 inch) pieces and add to another large zipper bag with 1 T marinade. Zip and shake to mix.
  4. Rinse and drain black beans and add to medium bowl with lid along with next 2 ingredients and remaining marinade and mix well.
  5. Mix last 4 ingredients in a small bowl with lid. This will be the cream sauce.
To Cook
  1. Grill chicken on indoor or outdoor grill and bake sweet potatoes in grill pan along with chicken (on grill) or bake in 400 degree oven for 20 minutes.
  2. Serve with black bean and corn salad and lime cream sauce. Black bean and corn salad may also be tossed with cooked sweet potatoes before serving.
