Ingredients
Prep
- 6 chicken breast cutlets thin breasts
- 1/2 C shredded Parmesan cheese
- 4 T butter softened
- 2 T minced garlic
- 1 t paprika
- 1 t Italian seasoning
- salt and pepper to taste
- 2 T butter
- 20 oz riced cauliflower fresh or frozen
- 1 T minced garlic
- 1 T lemon juice
- 1 T dried parsley flakes
- 1 t onion powder
On Cooking Day
- 20 oz green beans
Instructions
To Assemble
- Add chicken to large baking dish sprayed with non stick spray.
- Mix next 6 ingredients in a small bowl with a fork until crumbly. Top chicken evenly with cheese mixture. Cover with foil.
- Melt butter and mix with last 5 ingredients in a small baking dish sprayed with non stick spray. Cover with foil.
To Cook
- Bake both dishes (chicken uncovered and cauliflower covered) in a 400 degree oven for 30-40 minutes or until chicken is cooked through.
- Steam green beans in microwave until desired doneness.
