Ingredients
Prep
- 20 oz canned salmon
- 1/4 C mayonnaise or paleo mayo
- 2 eggs
- 1 T lemon juice
- 1 T minced garlic
- 1 T dried parsley flakes
- 1 t Old Bay Seasoning
- 1 t onion powder
- 1 lemon
On Cooking Day
- 2 T olive oil
- 20 oz cauliflower rice
- 10 C salad greens
Instructions
To Assemble
- Drain any liquid from salmon and add to large bowl along with next 7 ingredients.
- Form into patties (use an ice cream scoop to keep them uniform in size) and place in a medium container with lid. Use wax paper between layers.
- Slice lemon into wedges and store in small zipper bag.
To Cook
- Brown patties in a skillet with olive oil.
- Cook cauliflower rice according to package directions, serve with salad and lemon wedges.
