Easy Salmon Patties – CE
salad and cauliflower rice

Ingredients

Prep
  • 20 oz canned salmon
  • 1/4 C mayonnaise or paleo mayo
  • 2 eggs
  • 1 T lemon juice
  • 1 T minced garlic
  • 1 T dried parsley flakes
  • 1 t Old Bay Seasoning
  • 1 t onion powder
  • 1 lemon
On Cooking Day
  • 2 T olive oil
  • 20 oz cauliflower rice
  • 10 C salad greens

Instructions

To Assemble
  1. Drain any liquid from salmon and add to large bowl along with next 7 ingredients.
  2. Form into patties (use an ice cream scoop to keep them uniform in size) and place in a medium container with lid. Use wax paper between layers.
  3. Slice lemon into wedges and store in small zipper bag.
To Cook
  1. Brown patties in a skillet with olive oil.
  2. Cook cauliflower rice according to package directions, serve with salad and lemon wedges.
