Ingredients
Prep
- 1/4 C fresh parsley
- 16 oz lump crab meat canned or fresh
- 1 C panko bread crumbs
- 1/2 C mayonnaise
- 2 t Old Bay Seasoning
- 1 t hot sauce
- 1 egg
- 1 bunch asparagus
- 1 T olive oil
On Cooking Day
- 1 lemon optional
- 1 bag steamers mashed potatoes
- 1 T wasabi paste
Instructions
To Assemble
- Chop parsley and add to medium size bowl. Add next 6 ingredients to parsley and mix well.
- Use an ice cream scoop to scoop crab mixture into equal portions. Shape into patties "cakes" and place in a medium container with lid. Use wax paper between layers.
- Trim woody ends from asparagus and add to large zipper bag with olive oil.
To Cook
- Place crab cakes and asparagus on a large baking sheet sprayed with non stick spray. Bake 375 degrees for 20-25 minutes.
- Cook mashed potatoes according to package directions. (add any milk and butter as normal) Add wasabi. (start with 1/2 and taste to make sure it isn't too spicy for you).
- Serve with lemon wedges if desired.
