Easy Crab Cakes with Wasabi Mashed Potatoes – CE

Ingredients

Prep
  • 1/4 C fresh parsley
  • 16 oz lump crab meat canned or fresh
  • 1 C panko bread crumbs
  • 1/2 C mayonnaise
  • 2 t Old Bay Seasoning
  • 1 t hot sauce
  • 1 egg
  • 1 bunch asparagus
  • 1 T olive oil
On Cooking Day
  • 1 lemon optional
  • 1 bag steamers mashed potatoes
  • 1 T wasabi paste

Instructions

To Assemble
  1. Chop parsley and add to medium size bowl. Add next 6 ingredients to parsley and mix well.
  2. Use an ice cream scoop to scoop crab mixture into equal portions. Shape into patties “cakes” and place in a medium container with lid. Use wax paper between layers.
  3. Trim woody ends from asparagus and add to large zipper bag with olive oil.
To Cook
  1. Place crab cakes and asparagus on a large baking sheet sprayed with non stick spray. Bake 375 degrees for 20-25 minutes.
  2. Cook mashed potatoes according to package directions. (add any milk and butter as normal) Add wasabi. (start with 1/2 and taste to make sure it isn’t too spicy for you).
  3. Serve with lemon wedges if desired.
