Ingredients
Prep
- 6 chicken breast cutlets
- 20 oz cauliflower florets
- 1 T curry powder
- 1 T minced garlic
- 1 T dried parsley flakes
- 2 t minced ginger
- 1/4 C olive oil
- salt and pepper to taste
On Cooking Day
- 20 oz frozen peas
- 10 C salad greens
- 8 oz plain Greek yogurt optional
Instructions
To Assemble
- Add chicken and cauliflower to large zipper bag.
- Mix last 6 ingredients in a small bowl. Pour over chicken and cauliflower. Zip and shake well.
To Cook
- Pour chicken and cauliflower onto large baking sheet sprayed with non stick spray. Bake 400 degree oven for 20-25 minutes or until chicken is cooked through.
- Cook peas according to package directions. Serve yogurt as a sauce if desired. Serve with salad.
