Curry Chicken with Cauliflower – CE
peas and salad

Ingredients

Prep
  • 6 chicken breast cutlets
  • 20 oz cauliflower florets
  • 1 T curry powder
  • 1 T minced garlic
  • 1 T dried parsley flakes
  • 2 t minced ginger
  • 1/4 C olive oil
  • salt and pepper to taste
On Cooking Day
  • 20 oz frozen peas
  • 10 C salad greens
  • 8 oz plain Greek yogurt optional

Instructions

To Assemble
  1. Add chicken and cauliflower to large zipper bag.
  2. Mix last 6 ingredients in a small bowl. Pour over chicken and cauliflower. Zip and shake well.
To Cook
  1. Pour chicken and cauliflower onto large baking sheet sprayed with non stick spray. Bake 400 degree oven for 20-25 minutes or until chicken is cooked through.
  2. Cook peas according to package directions. Serve yogurt as a sauce if desired. Serve with salad.
