Ingredients
Prep
- 2 T butter
- 2 T minced garlic
- 1 t onion powder
- 1 1/2 lb large shrimp peeled and deveined
- 1/2 C chicken broth
- 1/2 C sun dried tomatoes sliced
- 1 1/2 C half and half
- 1/2 C shredded Parmesan cheese
- 1 T cornstarch
- salt and pepper to taste
- 2 t Italian seasoning
On Cooking Day
- 3 C spinach
- 2 bag frozen brown rice steamers
Instructions
To Assemble
- Mix first 4 ingredients in a large zipper bag.
- Mix next 7 ingredients in a medium bowl with lid.
To Cook
- Pour shrimp mixture into large skillet and cook until shrimp are pink and form a "c" shape. Remove from pan and set aside.
- Pour broth mixture into skillet and simmer over medium-high heat until sauce begins to thicken slightly (stir occasionally). Add in spinach and stir well. Cook until spinach wilts. Add shrimp and mix well before serving.
- Cook rice according to package directions.
