Creamy Tuscan Shrimp – CE

Ingredients

Prep
  • 2 T butter
  • 2 T minced garlic
  • 1 t onion powder
  • 1 1/2 lb large shrimp peeled and deveined
  • 1/2 C chicken broth
  • 1/2 C sun dried tomatoes sliced
  • 1 1/2 C half and half
  • 1/2 C shredded Parmesan cheese
  • 1 T cornstarch
  • salt and pepper to taste
  • 2 t Italian seasoning
On Cooking Day
  • 3 C spinach
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Mix first 4 ingredients in a large zipper bag.
  2. Mix next 7 ingredients in a medium bowl with lid.
To Cook
  1. Pour shrimp mixture into large skillet and cook until shrimp are pink and form a “c” shape. Remove from pan and set aside.
  2. Pour broth mixture into skillet and simmer over medium-high heat until sauce begins to thicken slightly (stir occasionally). Add in spinach and stir well. Cook until spinach wilts. Add shrimp and mix well before serving.
  3. Cook rice according to package directions.
