Ingredients
Prep
- 1 1/2 lb boneless chicken breast
- 1 green bell pepper
- 1 yellow bell pepper
- 1 red bell pepper
- 1 small yellow onion
- 1 T taco seasoning
- 1 T olive oil
- 4 t minced garlic
On Cooking Day
- 1 C half and half
- 1/2 C monterey jack cheese
- 8 oz penne pasta
- 1/2 C shredded Parmesan cheese
- 10 C salad greens
- 6 slice Texas Toast
Instructions
To Assemble
- Cube chicken into bite size pieces, sliced peppers and onion and add to large zipper bag along with remaining ingredients. Zip to seal and squish to mix.
To Cook
- Cook pasta according to package directions.
- Pour chicken mixture in skillet and cook over medium high heat until chicken is cooked through. Pour in half and half and cheese and cook until thickened. Mix pasta and sauce together.
- Cook Texas Toast according to package directions.
- Serve with salad.
