Ingredients
Prep
- 3 lb corned beef with spice packet
- 1 lb baby red potatoes
- 2 T olive oil
- 1/2 bag baby carrots
- 1 head cabbage
- 1 T coarse ground mustard
- 2 T butter softened
- 2 t Dijon mustard
On Cooking Day
- 2 C chicken broth
- 2 C water
Instructions
To Assemble
- Cut potatoes into quarters and place in ziplock bag. Add carrots to the bag and pour olive oil over vegetables. Shake to mix.
- Chop cabbage into small chunks and add to another zipper bag.
- Place corned beef in a large zipper bag with mustard and spice packet.
To Cook
- Place potatoes and carrots in the bottom of the slow cooker. Place meat on top. Pour broth and water into slow cooker careful not to rinse spices off of beef.
- Cook on low for 8 hours. Add cabbage and cook one more hour.
