Corned Beef, Carrots, and Cabbage – C

Ingredients

Prep
  • 3 lb corned beef with spice packet
  • 1 lb baby red potatoes
  • 2 T olive oil
  • 1/2 bag baby carrots
  • 1 head cabbage
  • 1 T coarse ground mustard
  • 2 T butter softened
  • 2 t Dijon mustard
On Cooking Day
  • 2 C chicken broth
  • 2 C water

Instructions

To Assemble
  1. Cut potatoes into quarters and place in ziplock bag. Add carrots to the bag and pour olive oil over vegetables. Shake to mix.
  2. Chop cabbage into small chunks and add to another zipper bag.
  3. Place corned beef in a large zipper bag with mustard and spice packet.
To Cook
  1. Place potatoes and carrots in the bottom of the slow cooker. Place meat on top. Pour broth and water into slow cooker careful not to rinse spices off of beef.
  2. Cook on low for 8 hours. Add cabbage and cook one more hour.
