Ingredients

- 3 C deli rotiserre chicken shredded - about 3 cups
- 6 oz chicken stuffing mix
- 1/4 C melted butter
- 4 zucchini
- 11 oz cream of chicken soup
- 1/2 C frozen chopped onions
- 1/2 C sour cream
On Cooking Day
- 6 C salad greens
Instructions
To Assemble
- Dice zucchini into bite size pieces. In a large bowl, combine the stuffing mix and melted butter. Set aside 1/2 cup of the mixture for topping.
- Add zucchini, cooked chicken, cream of chicken soup, onion and sour cream to the stuffing in the large bowl and mix well.
- Spread zucchini mixture in an even layer in a baking dish sprayed with nonstick cooking spray.
- Sprinkle reserved stuffing mix on top. Store with lid in fridge.
To Cook
- Bake, uncovered, at 350 for 50-60 minutes or until cooked through and the top is golden brown.
- Serve with side salad.
