Chicken Zucchini Casserole – C

Ingredients

Prep
  • 3 C deli rotiserre chicken shredded – about 3 cups
  • 6 oz chicken stuffing mix
  • 1/4 C melted butter
  • 4 zucchini
  • 11 oz cream of chicken soup
  • 1/2 C frozen chopped onions
  • 1/2 C sour cream
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Dice zucchini into bite size pieces. In a large bowl, combine the stuffing mix and melted butter. Set aside 1/2 cup of the mixture for topping.
  2. Add zucchini, cooked chicken, cream of chicken soup, onion and sour cream to the stuffing in the large bowl and mix well.
  3. Spread zucchini mixture in an even layer in a baking dish sprayed with nonstick cooking spray.
  4. Sprinkle reserved stuffing mix on top. Store with lid in fridge.
To Cook
  1. Bake, uncovered, at 350 for 50-60 minutes or until cooked through and the top is golden brown.
  2. Serve with side salad.
