Ingredients
Prep
- 1 lb raw peeled shrimp
- 1 red pepper
- 2 C heavy cream
- 1 T Cajun seasoning
- salt and pepper to taste
On Cooking Day
- 8 oz penne pasta
- 2 T olive oil
- 1/2 C grated Parmesan
Instructions
To Assemble
- Slice pepper and place in large zipper bag. Add shrimp to the bag and season with salt and pepper.
- Mix cream and cajun seasoning in a bowl with lid.
To Cook
- Cook pasta according to package directions.
- Add olive oil to skillet and turn to medium heat. Add shrimp/ pepper to hot skillet and cook for 3-5 minutes. Add cream mixture and bring to a boil.
- Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken. Remove from heat, stir in Parmesan cheese. Add pasta to sauce and toss.
