Cajun Shrimp Pepper Pasta – C

Ingredients

Prep
  • 1 lb raw peeled shrimp
  • 1 red pepper
  • 2 C heavy cream
  • 1 T Cajun seasoning
  • salt and pepper to taste
On Cooking Day
  • 8 oz penne pasta
  • 2 T olive oil
  • 1/2 C grated Parmesan

Instructions

To Assemble
  1. Slice pepper and place in large zipper bag. Add shrimp to the bag and season with salt and pepper.
  2. Mix cream and cajun seasoning in a bowl with lid.
To Cook
  1. Cook pasta according to package directions.
  2. Add olive oil to skillet and turn to medium heat. Add shrimp/ pepper to hot skillet and cook for 3-5 minutes. Add cream mixture and bring to a boil.
  3. Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken. Remove from heat, stir in Parmesan cheese. Add pasta to sauce and toss.
